Why you’ll love this ramen noodle coleslaw

This recipe is perfect as a stand alone dish, but it’s also great for serving as a side dish. It goes great with chicken teriyaki or even a beef satay, but it’s really pretty versatile. We also like to serve it alongside my bang bang salmon or grilled chicken tenders.

You can make this salad in literal minutes. There is barely any prep required, so it’s a great last minute recipe to make for a potluck or an event where you need a dish to pass.

Ingredients & substitutions

  • Ramen noodles – Any brand or flavor will do for this. The seasoning packet in ramen noodles (at least most brands) contains milk, but since we throw that away, this is totally dairy free.
  • Edamame – I buy shelled edamame in the freezer section and thaw them quickly in the sink before making my salad. If you have pods, you will need to shell them.
  • Coleslaw mix – This is my favorite shortcut when I want cabbage for a recipe. It’s super cheap and there’s no chopping required, but if you have or want to shred your own cabbage, feel free. I would also recommend shredding about 1/2 a carrot to add to the mix for color.
  • Cilantro – I love cilantro, but I know it’s not everyone’s favorite. Feel free to leave it out or sub in some green onion or chives.

How to make this ramen noodle coleslaw

Make the dressing. Whisk the dressing ingredients together until smooth and feel free to adjust the seasoning to your liking. If you prefer it sweeter, add a touch more honey. You can make this dressing up to 2 days in advance.

Mix the salad. Combine the coleslaw, edamame, cilantro and almonds in a big mixing bowl. Next, discard the ramen seasoning packets and crunch up the noodles into the salad. Then, add the dressing and toss to combine.

Ingredients 

For the coleslaw:

  • 1 14- ounce package coleslaw mix
  • 1 cup shelled edamame
  • 1/2 cup chopped, fresh cilantro
  • 1/2 cup sliced almonds, toasted
  • 1 package ramen noodles, seasoning packet discarded

For the dressing:

  • 1/4 cup neutral oil
  • 2 tablespoons lime juice
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 1/2 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon minced ginger
  • 1 garlic clove, minced

Instructions 

  • In a small bowl, whisk the dressing ingredients together and set aside.
  • In a large mixing bowl, add the coleslaw, edamame, cilantro and almonds.
  • Crush ramen noodles and add them to the bowl.
  • Add dressing and toss to evenly coat the coleslaw.
