Bang Bang Salmon Bites
These bang bang salmon bites are a fun twist on Bonefish Grill’s infamous bang bang shrimp – perfectly portioned pieces of salmon roasted and topped with a super easy bang bang sauce. This simple, 5-ingredient recipe is ready in under 20 minutes, and you will not be able to get enough of it.
Why you’ll love this bang bang salmon
- I’m sure you’ve heard of bang bang shrimp – made famous by the Bonefish Grill in the early aughts, but since my kids don’t love shrimp, so I decided to swap the seafood for one of their favorites and came up with this super easy recipe.
- These salmon bites are super quick and definitely easy to prepare. This makes them a convenient option for busy weeknights when you want a flavorful and bold, homemade healthy meal.
- To get the ultimate crispy edges on my salmon bites without overcooking them, I added a tiny bit of baking soda to their seasoning which helps them get that delicious crispy texture while still keeping the fish tender and flaky.
Ingredients & substitutions
- Center cut salmon – I like to use center cut salmon for this recipe because I find that it’s easier to cut into cubes, but you can definitely use any salmon you have. When cutting the salmon, try to make your pieces as uniform as possible.
- Sweet chili sauce – This Thai chili sauce can be found in the international section of your grocery store. If you can’t find it there, an Asian market should also carry it, or you can make your own.
- Mayonnaise – This is a key ingredient for the bang bang sauce. You can use light mayonnaise if you prefer, but please don’t use Miracle Whip.
- Sriracha – This adds heat to the bang bang sauce. You can adjust it to your liking.
- Baking soda – Baking soda helps the salmon brown and creates a crisp exterior. This is totally optional, but I find that it makes the salmon texture even better and if you have it, you might as well.
Making changes to a recipe can result in recipe failure. Any substitutions listed below are simple changes that I believe will work in this recipe, but results are not guaranteed.
How to make these bang bang salmon bites
Make the sauce. In a small bowl, whisk the mayonnaise, sweet chili sauce and Sriracha together until smooth. We don’t need a full batch of my 3 ingredient bang bang sauce for this recipe, so I usually just mix up half a recipe’s worth. If you want extra sauce, feel free to make the whole amount.
Season and bake. Preheat your oven to 400˚F and line a baking sheet with parchment paper. Then, while the oven is preheating, cut up your salmon and season it with salt, pepper and baking soda.
Spread it out on the baking sheet and roast it until the edges are beginning to brown and look crispy. This should take about 10 minutes.
Sauce and serve. Remove the salmon from the oven, add a little bit of sauce to the salmon and stir it to coat the salmon. To serve, garnish with sliced green onion and serve with your salmon with some extra sauce and some rice (or whatever sides you prefer).
Everything you need to know about bang bang salmon
This will depend on the recipe you are following and your desired texture. For this recipe, we are baking the salmon bites uncovered to allow for the exterior of the salmon to become just slightly crispy.
When you’re baking salmon bites, you set your oven anywhere between 350°F – 400°F, all ovens are slightly different and depending on how you like your salmon you may want to adjust the temperature slightly. If you want a slower cook and worry less about things drying out, 350°F is your best bet. But if you’re craving a bit of crispiness on the edges, you can set the temperature to 400°F. Always remember to keep an eye on whatever you are cooking and make sure the internal temperature is at least 145°F inside to be safe.
Cook time for salmon can vary, depending on the thickness and size of your salmon pieces. When cooking salmon bites, keep in mind that the size is much smaller than cooking a salmon fillet, so the cook time might not be quite as long. If your bite sized pieces are still quite thick like ours were, cooking time could still be a bit longer.

Ingredients
- 1 pound center cut salmon cut into bite sized pieces
- 1/2 teaspoon coarse salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon baking soda
- 1 tablespoon olive oil
- 1/4 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon Sriracha sauce
- For garnish: sliced green onions optional
Instructions
- Preheat oven to 400˚F and line a baking sheet with parchment paper.
- Add salmon pieces to a large bowl and season with salt, pepper, baking soda. Add olive oil and stir to coat the salmon evenly with seasoning. Transfer to prepared baking sheet and roast for 10 minutes.
- While salmon is cooking, whisk the sauce ingredients together until smooth.
- Remove salmon from oven and toss with a few tablespoons of sauce. Stir to coat.
- Garnish with green onion and serve with remaining sauce.
