For the coleslaw:
- 1 14- ounce package coleslaw mix
- 1 cup shelled edamame
- 1/2 cup chopped fresh cilantro
- 1/2 cup sliced almonds toasted
- 1 package ramen noodles seasoning packet discarded
For the dressing:
- 1/4 cup neutral oil
- 2 tablespoons lime juice
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 1/2 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon minced ginger
- 1 garlic clove minced
In a small bowl, whisk the dressing ingredients together and set aside.
In a large mixing bowl, add the coleslaw, edamame, cilantro and almonds.
Crush ramen noodles and add them to the bowl.
Add dressing and toss to evenly coat the coleslaw.
