Ingredients

For the coleslaw:

  • 1 14- ounce package coleslaw mix
  • 1 cup shelled edamame
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup sliced almonds toasted
  • 1 package ramen noodles seasoning packet discarded

For the dressing:

  • 1/4 cup neutral oil
  • 2 tablespoons lime juice
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 1/2 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon minced ginger
  • 1 garlic clove minced

Instructions

  • In a small bowl, whisk the dressing ingredients together and set aside.
  • In a large mixing bowl, add the coleslaw, edamame, cilantro and almonds.
  • Crush ramen noodles and add them to the bowl.
  • Add dressing and toss to evenly coat the coleslaw.
