Why you’ll love this roasted broccoli

Oven roasted broccoli is one of my favorite side dish recipes. It’s a super easy, hands-off method that goes with almost any dinner, and the high heat caramelizes the edges just enough to give you that slightly crispy, golden brown finish — so much better than steamed or boiled broccoli.

It’s quick, it’s easy, and it comes out perfectly every time. It’s great for when you’re cooking on the stovetop because you don’t have to watch another pot while you’re cooking. Just pop it in the oven, set a timer and wait.

Melissa’s tips & tricks

  1. Bite-sized pieces. Make sure you cut your broccoli into equal sized pieces. This helps them roast at the same rate, so you don’t end up with some pieces burnt and others undercooked.
  2. Don’t crowd the pan. Make sure the broccoli has lots of room on the baking sheet. If it’s crowded, it will steam the broccoli instead of roasting.

Broccoli can be so delicious if it is seasoned and cooked well. You want to make sure to add salt and pepper, but garlic is always a great option.

Seasoned with just olive oil, garlic, salt and pepper, this simple roasted broccoli recipe yields perfectly cooked and flavorful broccoli with caramelized, crispy edges every time. Ready in under 30 minutes, this easy side dish recipe goes with just about any dinner you can think of.

Ingredients 

  • 1 head broccoli, about 1 ½ pounds, cut into pieces
  • 2 tablespoons olive oil
  • ¼ teaspoon granulated garlic, or garlic powder
  • ½ teaspoon coarse salt
  • ¼ teaspoon black pepper

Instructions 

  • Prep. Preheat oven to 400F (200C) and line a baking sheet with parchment paper.
  • Season the broccoli. Spread broccoli pieces evenly onto a parchment or foil-lined cookie sheet or large baking dish. Drizzle with olive oil and season with salt, pepper and garlic powder to taste.
  • Roast the broccoli. Transfer the baking sheet to the oven and roast for 15 – 20 minutes or until broccoli is fully cooked (it will have just started to brown).

    I LOVE roasted broccoli! Mmmm nom nom nom. It’s so good with some slivered garlic cloves, a bit of lemon zest tossed at the end, and then some parmesan cheese on top! Ina taught me that one.. haha! 😉
