Why I love these lamb burgers

I’ve been in a bit of a dinner rut lately. It happens from time to time, and I end up with zero motivation for cooking (yes, it even happens to food bloggers). Whenever I feel stuck, making something new and/or unusual helps get me through it. So I thought it might be fun to play around with lamb a little bit more.
I’ve been really loving lamb, and, luckily, my family is loving it too. Last month, I shared these amazing, Gilmore Girls inspired lamb chops recipe, and now I have this amazing lamb burger recipe for you. Yes, lamb makes a great burger.
The sweet, slightly gamey flavor of the lamb and the higher fat amount makes for a really flavorful burger. Plus, I’ve added a mix of spices that pair really well with lamb, and I topped them with garlic aioli and peppery arugula. No cheese necessary.
So, if you’re tired of the same old burger, you have to give these spiced lamb burgers a try.

How to make lamb burgers
Prepare the meat mixture. Using clean hands, mix the lamb and spices together in a large bowl until everything is evenly combined. Divided the mixture into equal 6 patties (about 1/3 pound).
You can make up to 8 patties, but I like to make mine a little larger to make up for the size they lose while cooking.
Cook the patties. Heat a large skillet to medium-high heat. Add the burgers to the pan and cook for about 10 – 12 minutes, flipping once. If you aren’t using a non-stick or cast iron skillet, you might want a tiny bit of oil or cooking spray in your pan.
To grill the burgers: heat your grill to medium-direct heat (about 350˚F). Cook for about 10 minutes, turning once. With either method of cooking, the patties should reach 160˚F.
Top the lamb burgers. We topped our burgers with garlic aioli, red onion and arugula. They would also be great topped with tzatziki sauce, mint chutney, or bacon jam. You can even top them with pineapple.

Frequently asked questions
The USDA recommends a cooking temperature of 160˚F for ground lamb. This would bring the burgers to medium. Any lower of a temperature would put you at risk of food borne illnesses. We cooked ours to medium and they were perfect.
Lamb is harder to raise and require more resources than other meats, such as beef or pork. That, combined with a lower demand for the product, has driven prices up.
