Ingredients & substitutions

  • Duck fat – Rendered duck fat is obtained from slowly melting down duck fat, resulting in a luxurious cooking fat with a distinctive taste. This can be purchase at most larger grocery stores, but you can also order a jar online if you can’t find it in store.
  • Harissa paste – This chili paste is known for its intense spicy flavor and vibrant red color. Different brands will vary in intensity and flavors, so try a few out to find your favorite.

How to make roasted harissa and duck fat potatoes

Prep. Preheat your oven to 400˚F and halve your potatoes to give them more cooking surface for browning and seasoning.

Season the potatoes. In a large mixing bowl combine potatoes, harissa paste, rendered duck fat, cumin and salt. Stir until potatoes are well coated.

Roast the potatoes. On a large baking sheet, arrange potatoes in a single layer. Pop the tray into the oven and roast the potatoes about 35 – 45 minutes or until potatoes have become golden and crispy.

Quick tip: I like to give mine a stir about half way through to encourage the potatoes to get a little crispier.

Duck fat, like most cooking fats or oils, assist in heat transfer and encourage browning. Basically the rendered duck fat helps the potatoes get crispy and brown, but most importantly the duck fat adds a distinctively rich flavor to the potatoes.

Can you reheat duck fat potatoes?

Reheating roasted duck fat potatoes is a breeze. Toss them on a baking sheet and heat them in the oven for maximum crispiness. Air fryers also work well for reheating roasted potatoes.

Ingredients 

  • 1 ½ – 2 pounds small potatoes
  • 2 tablespoons rendered duck fat
  • 1 tablespoon harissa paste
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • Black pepper, to taste

    This is not a rating but more of a comment.
    You’ve got this recipe as vegan but obviously overlooked the duck fat component ( unless you have stated a vegan option somewhere that I missed).
    Just thought I’d let you know.
