
Why I love these corned beef tacos
Corned beef and cabbage is a staple for many St. Patrick’s Day dinner tables. But, if I’m being completely honest, I think it’s pretty boring. I decided to do something different this year with a crazy twist on this traditional dish – Corned beef and cabbage tacos with Guinness horseradish cream sauce.
These tacos are the perfect way to use up your left over corned beef, but it’s also a great way to serve it in the first place. The choice is yours. Either way, you’ll need cooked corned beef for the tacos.
I didn’t have leftovers, so I picked one up at the grocery store and cooked it in a mixture of Guinness, water (1 can Guinness + 1 quart water), and the spice packet. I followed the directions, and then chopped it up. This baked corned beef is one of my favorite ways to prepare corned beef, if you need a great recipe to follow.

Ingredient notes:
- Sour cream – Since we went dairy free, we opt for a vegan sour cream.
- Mayonnaise – As usual, we chose to use a light mayo but feel free to use whatever style mayo is your favorite. Use vegan mayo to make this egg free.
- Guinness – You can swap any stout that you like, but we like to make sure it’s an Irish one 😊

Yes. You should rinse corned beef before cooking. Normally, I wouldn’t suggest rinsing raw meat, but since corned beef is stored in a super salty brine, I think it’s best to rinse or soak it before cooking to remove a bit of the saltiness.
Corned beef is usually made from beef brisket, but the unique flavor comes from the brine it’s preserved in, which contains pink salt and pickling spices such as juniper, all spice, and mustard seed.

Corned Beef Tacos
Ingredients
- 1/3 cup dairy free sour cream
- 1/3 cup light mayonnaise, or vegan mayo for egg free
- 1/4 cup Guinness stout
- 3 teaspoons fresh horseradish
- 2 teaspoons spicy brown mustard
- 1 teaspoon cider vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups cooked, chopped corned beef, heated
- 1 package coleslaw mix
- 8 multigrain tortillas
Instructions
To prepare the sauce:
- In a small bowl, whisk together the sour cream, mayonnaise, Guinness, horseradish, mustard, vinegar and salt & pepper.
To assemble the tacos:
- Top each tortilla with some corned beef, cabbage and sauce.
