Why I love this flank steak marinade recipe

I love a good flank steak, and the first time I made a flank steak with this marinade I could stop eating it. The two of us finished a pretty large flank (definitely enough for 4 people).

This recipe features a variety of flavors that mix together so well. Everything you could ask for in a steak marinade is in here. Umami in the form of soy sauce and Worcestershire. Sweetness from the honey (or brown sugar if you prefer) and molasses. Plus extra flavor from the mustard, tomato paste, capers and garlic.

There are a lot of ingredients in here, but I promise you the prep work is simple. Beyond measuring, there isn’t much you need to do other than wait for the marinade to work miracles on your meat.

I love serving this with dairy free mashed potatoes and Italian green beans, or if I’m looking for more of a restaurant style meal, I’ll serve beer battered onion straws an a kale caesar salad.

How to cook flank steak

Make the marinade. In a small bowl, combine the marinade ingredients. Whisk until smooth. If you need to heat the honey a bit to make it easier to mix, go for it – 10 or 15 seconds in the microwave should be enough.

In a large container or zip-top bag, cover the flank steak in marinade and allow it to sit, refrigerated overnight, or for a minimum of 1 hour. The longer the better.

Before cooking, remove the flank steak from the marinade and pat dry with paper towels. Season with salt & pepper.

How to broil flank steak in the oven: Preheat your oven to the broil setting, with your broiler pan in oven. When the oven and pan is hot, carefully place the flank steak in the center of the broiler pan.

Broil for 7 – 9 minutes, or until the steak reaches and internal temperature of 135˚F (for medium-rare). I don’t recommend turning the steak when broiling.

How to grill flank steak: Heat your grill to medium-high heat (about 450-500˚F). Grill for 4 – 5 minutes per side.

Slice and serve. Let the flank steak rest for 5 – 10 minutes before slicing. Slice thinly against the grain and serve immediately.

FAQ’s and tips for making the best flank steak marinade

How long should you marinate flank steak?

You can marinate your meat for hours at a time, some people even go so far as to do it for a whole 24 hours. I don’t understand how they can be so patient knowing there’s delicious food needing to be cooked, but hey- it works for them.

Can you marinate flank steak too long?

Yes, technically you could (but this is actually kind of hard to do). Thanks to the salt and seasonings in a marinade you help to break down fibers in the steak and make it softer. By letting your steak marinade for too long you could get a mushy piece of meat that is oversalted. 

Is flank steak a good cut of meat?

It’s a very lean piece of meat and it’s perfect for a wide range of cooking methods including roasting, broiling, sauteing and grilling. Unfortunately, it can be easy to overcook and dry it out due to the fat content so it’s important to follow recipes and cut against the grain when you’re done.

Ingredients 

  • 1 1/2 – 2 pounds flank steak
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons reduced sodium soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon honey, or brown sugar
  • 1 tablespoon whole grain mustard
  • 1 tablespoon tomato paste
  • 1 tablespoon capers
  • 2 teaspoons minced garlic, 2 cloves
  • 1 teaspoon molasses
  • 1/2 teaspoon coarse salt

Instructions 

For the marinade:

  • Whisk or stir marinade ingredient together in a medium bowl until smooth. Cover flank steak and allow it to marinate overnight in the refrigerator (or for a minimum of 1 – 2 hours).
  • Remove steak and discard marinade. Season with salt & pepper before cooking.

To broil:

  • Preheat broiler and broiler pan in the oven. Place steak on the broiler pan and cook for 7 – 9 minutes, or until steak reaches 135˚F for medium rare.
  • Remove steak from oven and allow it to rest on a cutting board for 5 – 10 minutes before slicing.

To grill:

  • Preheat grill to medium-high (about 450–500˚F). Grill steak for 4 – 5 minutes per side, turning once, or until steak reaches 135˚F for medium-rare.
  • Remove steak from grill and allow it to rest for 5 – 10 minutes before serving.

Notes

For best results, thinly slice flank steak against the grain with a sharp knife. Serve immediately.
