Ingredients

  • 1/2 cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 1/2 cup sun dried tomatoes
  • 1 large clove garlic peeled
  • 1/4 cup walnuts pieces
  • 2 tablespoons vegan parmesan optional
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon pepper

Instructions

  • Make the pesto. Combine all the ingredients in a food processor. Blend all the ingredients until they are smooth. Toss with pasta or transfer to a bowl until ready to use.
  • Storage tips: Transfer unused pesto to an airtight container and store for up to 1 week.
