Pico de Gallo

Pico de gallo is a simple, flavorful topping for your favorite recipe, or serve it as a salsa with crispy tortilla chips for a fresh appetizer. Makes 4 - 5 cups.

Ingredients

  • 6 medium tomatoes seeded and diced
  • 1 onion diced
  • 2 cloves garlic minced
  • 1/2 cup finely chopped fresh cilantro
  • 1 jalapeño seeded and diced
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • In a large bowl, combine all ingredients. Allow flavors to meld for about 20 minutes before serving.

Notes

If your tomatoes are a bit watery, sprinkle a little salt on them and let them drain for about 10 to 15 minutes before tossing them in the bowl. This will help get rid of most of the excess liquid.
