Ingredients

For the Salad:

  • 4 1/2 cups cooked quinoa 1 1/2 cups uncooked
  • 1 15- ounce can chickpeas drained and rinsed
  • 1/2 English cucumber seeded and chopped
  • 1 cup quartered cherry tomatoes
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced onion
  • 1/2 cup sliced Kalamata olives
  • 3 cups arugula

Dressing:

  • 1 garlic clove minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon black pepper

Instructions

  • In a large bowl, combine the salad ingredients.
  • In a small bowl, whisk together the dressing ingredients. Pour over salad and stir to evenly coat.
