For the Salad:
- 4 1/2 cups cooked quinoa 1 1/2 cups uncooked
- 1 15- ounce can chickpeas drained and rinsed
- 1/2 English cucumber seeded and chopped
- 1 cup quartered cherry tomatoes
- 1/2 cup diced red bell pepper
- 1/4 cup diced onion
- 1/2 cup sliced Kalamata olives
- 3 cups arugula
Dressing:
- 1 garlic clove minced
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon Italian seasoning
- 1/2 teaspoon coarse salt
- 1/4 teaspoon black pepper
In a large bowl, combine the salad ingredients.
In a small bowl, whisk together the dressing ingredients. Pour over salad and stir to evenly coat.
