This easy Dijon vinaigrette is my go-to salad dressing and works with virtually any salad you might want to make. It's made with basic kitchen staples that we always have on hand, like Dijon mustard and lemon juice.
- 1/4 cup white wine vinegar (or lemon juice)
- 1/2 cup olive oil
- 2 tablespoons Dijon mustard
- 1 garlic clove (minced)
- 1/2 teaspoon coarse salt
- 1/4 teaspoon black pepper
Combine ingredients in a bowl.
Whisk until smooth and fully emulsified.
Adjust seasoning with salt & pepper, to taste.
