Mint Chimichurri

This mint chimichurri sauce is the ultimate mint sauce for lamb and comes together in just a few minutes. Made with fresh herbs, garlic and chili flakes, this refreshing take on traditional lamb sauce is tangy, spicy and full of flavor.

Ingredients

  • 1 cup parsley
  • 1 cup mint
  • 1/2 cup cilantro leaves optional, can sub more mint
  • 1 garlic clove
  • 2 tablespoons champagne vinegar
  • 1 teaspoon salt
  • 1/2 - 1 teaspoon crushed red pepper flakes
  • 1/2 cup olive oil

Instructions

  • Blend everything in a food processor until almost smooth.
  • Adjust seasoning with salt, to taste. Blend again if needed.
  • Transfer to an airtight container and refrigerate until ready to use.
