Whole Wheat Couscous & Chickpea Tabbouleh

Ingredients

  • 1 cup uncooked whole wheat pearl couscous
  • 2 15-ounce cans chickpeas, drained and rinsed
  • 2 small English cucumbers, seeded and chopped
  • 1 pint grape tomatoes, halved
  • 2 green onions, sliced
  • 1 garlic clove, minced
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh basil (or mint)
  • Zest and juice of 1 large lemon
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Prepare couscous according to package directions, and allow to cool before adding to salad.
  2. Combine remaining ingredients in a large bowl. Mix until ingredients are evenly distributed.
  3. When cooled, add couscous and mix until combined. Adjust seasoning with salt and pepper, if desired.
