Walnut Crusted Salmon with Basil Walnut Pesto

For the salmon:

  • 1 individual salmon filets
  • 1 cup walnuts
  • 1 tablespoon dried parsley
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon black pepper

For the pesto:

  • 2/3 cups walnuts
  • 1 cup fresh basil leaves
  • 1/4 cup lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon black pepper


For the salmon:

  1. Preheat oven to 350˚F and line a baking sheet *affiliate link with parchment paper *affiliate link.
  2. In a food processor *affiliate link, pulse walnuts until they reach a fine crumb.
  3. Stir walnuts, dried parsley, salt and pepper together in a wide bowl until combine.
  4. Brush olive oil onto salmon pieces and dip into walnut topping.
  5. Transfer salmon to baking sheet *affiliate link and bake for 20 minutes or until salmon flakes easily with a fork.

For the pesto:

  1. Combine ingredients in a food processor *affiliate link. Blend until smooth.
  2. Adjust seasoning with salt and pepper, if desired.
