Walnut Crusted Salmon with Basil Walnut Pesto

For the salmon:

  • 1 individual salmon filets
  • 1 cup walnuts
  • 1 tablespoon dried parsley
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon black pepper

For the pesto:

  • 2/3 cups walnuts
  • 1 cup fresh basil leaves
  • 1/4 cup lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon black pepper


For the salmon:

  1. Preheat oven to 350˚F and line a baking sheet with parchment paper.
  2. In a food processor, pulse walnuts until they reach a fine crumb.
  3. Stir walnuts, dried parsley, salt and pepper together in a wide bowl until combine.
  4. Brush olive oil onto salmon pieces and dip into walnut topping.
  5. Transfer salmon to baking sheet and bake for 20 minutes or until salmon flakes easily with a fork.

For the pesto:

  1. Combine ingredients in a food processor. Blend until smooth.
  2. Adjust seasoning with salt and pepper, if desired.
