So Christmas is over. I hope you ate all the cookies and all the pie and all the turkey you could, because it’s time to gear up for your New Year’s resolutions. January 1st is right around the corner and it’s time to start thinking about how your can be healthier version of you in the new year (you should probably start with a few healthy recipes).
For me, one of the hardest meals is breakfast. It’s tough to find a quick and easy option that is filling and good for you. This strawberry ricotta breakfast toast is a perfect solution. After toasting a hearty, whole-grain bread, I spread a thick layer of ricotta cheese* and top with with sliced strawberries, almonds and honey.
To make this breakfast a bit more fun, I added some Don Victor® Orange Blossom Comb honey and honeycomb pieces, giving you a boost of natural energy and sweetness without adding all that processed sugar to your meal. Yes, you can eat honeycomb. I know it sounds strange, but it’s actually really great. It’s smooth and sweet and pairs really well with the nuttiness of the almonds. Anyway, I found this particular honey at Walmart in the Hispanic aisle.
Dairy free tip: Try swapping vegan ricotta for this recipe to make it dairy free. Or, try some thinly sliced avocado
This ricotta breakfast toast is obviously really versatile and adaptable. You can top the toast with whatever you like or use whatever bread you like. Try swapping out the fruit for a different one, or adding a mint of fresh mint. Just don’t forget the honey or honeycomb. It’s the one thing that makes this recipe more than just a quick and easy breakfast. It makes it a total treat.
- 1 slice multigrain bread
- 2 – 3 tablespoons part-skim ricotta cheese*
- 3 – 4 strawberries, sliced (or fruit of choice)
- 1 tablespoon sliced almonds, toasted
- Don Victor® Orange Blossom Comb Honey Globe Jar
- Toast bread as desired.
- Spread a layer of ricotta cheese* on bread and top with strawberries, almonds and honeycomb.
- Drizzle with honey, to taste.
Lactose free option: swap lactose free cottage cheese for ricotta (blended to create the consistency of ricotta if desired).
Dairy free option: substitute a vegan ricotta (such as Tofutti or Kite Hill) or thinly sliced avocado.
