For some reason, as soon as the summer sun hits, I start craving fresh mozzarella cheese. Mostly in the form of caprese salad, but really, I’ll eat it any way I can. I’m also a huge fan of sciue sciue (because that name alone makes it awesome). I love it, and I’m always looking for new ways to use it. Strawberry caprese salad has always been on my list of things to try, but I wanted to make it a little hardier so I put it on a big bed of massaged kale.

The result was the freshest salad I’ve ever had. The strawberries pair so well with the mozzarella and the basil vinaigrette is simply perfect. I skipped the parmesan that’s normally in a basil pesto and added a champagne vinaigrette to add sweetness. The result was a delicate basil vinaigrette that doesn’t overpower the other salad ingredients. It’s amazing.

Have you ever tried tearing mozzarella instead of cutting it? Apparently it’s the way to go because it doesn’t break down the proteins. You can read more about it here. So I tried it out, and even though I didn’t really notice a flavor difference, I liked it. And, it really does look cooler. Just make sure you season your mozzarella a little salt & pepper before adding it to the salad. It makes all the difference in the world.

Strawberry Caprese Kale Salad

For the basil vinaigrette:

  • 1 cup loosely packed basil leaves (about 1 ounce)
  • 2/3 cup olive oil
  • 1/3 cup champagne vinegar
  • 4 garlic cloves
  • 2 tablespoons sliced almonds
  • 1/2 teaspoon coarse salt

For the salad:

  • 1 bunch kale
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon coarse salt
  • 8 ounces fresh mozzarella, torn
  • Salt & pepper
  • 1/2 pound strawberries, sliced
  • 1/4 cup sliced almonds


To make the dressing:

  1. Blend all dressing ingredients in a food processor. Set aside.

To make the salad:

  1. Lightly season the mozzarella with salt & pepper.
  2. In a large bowl, combine kale, olive oil, lemon juice and salt. Massage the kale until it begins to wilt and a darker color develops.
  3. Add remaining salad ingredients. Toss with basil vinaigrette before serving.
