Ingredients & substitutions

  • Sirloin steak – Try to get the best quality of meat you can afford, and look for pieces that don’t have tons of connective tissue if you can avoid it. Otherwise, while you’re cubing the meat, you’ll want to remove any tough pieces.
  • Garlic – Fresh minced garlic is going to give you the best flavor, but if you’re in a pinch, store-bought minced will work.
  • Butter – We used our favorite dairy free butter Earth Balance, but any butter you would normally use will work (just keep it dairy free if needed).

Making changes to a recipe can result in recipe failure. Any substitutions listed below are simple changes that I believe will work in this recipe, but results are not guaranteed.

How to make garlic steak bites

Prep the beef. Cut the steak into bite-sized cubes. I normally go for around 1″ in size, but it’s never going to be perfect. The pat the dry with a paper towel and season them well with coarse salt & black pepper.

Sear the steak. Heat a skillet to medium-high. When it’s hot, add a thin layer of oil to the pan, about 1 tablespoon. Let that get hot and then sear the steak pieces for about 1 – 2 minutes per side.

You want to work in batches to give the steak space to brown. Keep an eye on them and when they naturally release from the pan, they should be nice and golden. If not, you’ll want to turn up your heat a bit.

Transfer the cooked steak bites to a plate and continue cooking the remaining pieces.

Make the butter sauce. When all the steak is cooked, deglaze the pan with 1/4 cup liquid. Any liquid will work: water, stock, wine, beer. If you use stock, make sure it’s reduced sodium.

Scrape up the bites of flavor that have stuck to the pan and add the butter. When it’s mostly melted, add the garlic and let it sauté until fragrant, about 30 seconds. Then, return the steak to the pan and toss to coat them in butter.

We used sirloin steak to make our steak bites. You do not need to have a extravagant cut of steak for this recipe. You can substitute a different type of steak if you prefer, but the sirloin was perfect for cubing and searing.

Ingredients

  • 1 tablespoon olive oil
  • 2 – 3 pounds sirloin steak (cubed)
  • Salt & pepper (to taste)
  • 3 – 4 garlic cloves (minced)
  • 1/4 cup dairy free butter*
  • Fresh parsley (for garnish)

Instructions

  • With a paper towel, pat steak cubes dry. Then, season liberally with salt & pepper.
  • Heat a large skillet to medium-high. Add olive oil.
  • When the oil is hot, add the steak pieces to the pan, working in batches to allow room between pieces. Sear the meat until golden brown, turning as needed. Transfer cooked steak to a plate and continue until all pieces have be browned.
  • Deglaze the pan with the water and allow it to partially evaporate.
  • Add butter to the pan and allow it to melt.
  • When melted, add garlic and sauté until fragrant, about 30 seconds.
  • Return the steak bites to the pan and stir to coat in butter sauce.
  • Garnish with parsley and serve immediately.

Notes

*Traditional dairy butter can be substituted if it meets you dietary needs/restrictions.
