Spiced Apple Walnut Muffin Tops

Ingredients

  • 1 cup chopped Granny Smith apple
  • 1/2 cup sugar, divided
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1 egg
  • 1/3 cup almond milk
  • 3 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 1/4 cup walnut pieces

Instructions

  1. Preheat oven to 350˚F and prepare muffin top pan.
  2. In a medium bowl, combine apples and 1/4 cup sugar. Stir to coat apples evenly. Set aside.
  3. In a large bowl, whisk together remaining sugar, flour, baking powder, and spices.
  4. Add egg, almond milk, oil and vanilla extract. Whisk until mostly smooth.
  5. Add apple mixture and walnuts. Stir until combine.
  6. Divide mixture between muffin top cups. Bake for 11 – 13 minutes, or until an inserted toothpick comes out clean.
  7. Remove from oven and cool in pan until muffin tops are cool to touch. Transfer to a wire cooling rack.
