Pulled pork might be one of the best things in the world. It’s delicious and it’s easier than ever when you make it in the slow cooker. It’s my number one go-to “main course” for parties and other get-togethers. Why? Because you can make it ahead of time and, if you buy the pork on sale, it can be really, really cheap.

I made these asian pulled pork sliders two days before Ellie’s birthday party. Then, the day of her party, I put everything into the crockpot and kept it warm until we were ready to serve it. It really saved me a lot of work on party day and I was so thankful that it was already done.

The only thing I would do differently would be to pulled the pork while it’s still warm, instead of waiting until the morning of the party to do it. Warm meat just falls apart better.

I served my sliders on whole wheat King’s Hawaiian rolls with a simple rice vinegar dressing coleslaw that had some cilantro added in, but the pulled pork is seriously good without any of that.

Slow Cooker Asian Pulled Pork Sliders

Ingredients

For the pork:

  • 3 – 4 pound center cut pork loin roast
  • 1/3 cup reduced-sodium beef broth
  • 1 tablespoon fresh grated ginger
  • 4 garlic cloves, minced
  • 2 tablespoons unsweetened applesauce

For the sauce:

  • 1/4 cup soy sauce
  • 1/2 cup hoisin sauce
  • 1 1/2 tablespoons lime juice
  • 4 garlic cloves, minced
  • 1 tablespoon fresh grated ginger

For the sandwiches:

  • 12 – 16 small sandwich rolls (such as King’s Hawaiian)

Instructions

  1. Place the roast into a slow cooker with the beef broth, ginger, garlic and applesauce. Cover and cook on low for 6 – 8 hours.
  2. While pork is cooking, stir together soy sauce, hoisin, lime juice, garlic and ginger. Cover and refrigerate until ready to use.
  3. When pork is fully cooked, remove from slow cooker and shred meat. Reserve 1/2 – 1 cup of cooking liquid and discard any extra.
  4. Before serving, return the meat to the slow cooker. Add the sauce and 1/2 cup of cooking liquid. Stir to coat the meat in the sauce and heat on low for about 30 minutes (or until meat is heated through). If needed, add remaining cooking liquid to thin sauce. Keep warm until serving.
