Sometimes things are just so easy it’s crazy. I had no idea how simple it would be to make my own infused simple syrup. I made a sugar free pumpkin spice coffee syrup a while back that took a big handful of ingredients, but simple syrups, they’re easy. I guess that’s why they call them simple. It’s literally sugar and water and whatever you want to infuse it with.

I decided to go with my favorite herb of the moment, rosemary. It’s literally the best tasting thing in the world to me. I’m so obsessed with it, you would think I’m still having pregnancy cravings. But, I’m not. I’m just crazy for rosemary. Maybe I should start a club or something.

Obviously, I made this rosemary simple syrup with the intention of using it for a oh-so-special recipe that’s still a secret (check back on Wednesday to see what it is), but you could use this in almost anything. Mix it with club soda for an afternoon beverage or mix it into your favorite cocktails. There’s no end to the possibilities.

Rosemary Simple Syrup

  • Yield: about 1 1/2 cups

Ingredients

Scale
  • 1 cup water
  • 1 cup sugar
  • 2 springs of rosemary, snipped into small pieces

Instructions

  1. In a small saucepan, heat water, sugar and rosemary over medium heat. Stir until sugar is melted.
  2. Remove from heat and allow syrup to cool completely.

  1. I am so into rosemary right now, too, so this sounds amazing (beautiful pictures, too!) One of my favorite restaurants has a rosemary and grapefruit based cocktail that is just divine. I think it’s the perfect herb for winter 🙂
