One Pot Chili Mac

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 pound ground beef
  • 1 can chili beans in mild sauce, drained
  • 1 can diced tomatoes with juice
  • 4 cups reduced-sodium chicken broth
  • 23 tablespoons chili powder
  • 2 teaspoons paprika
  • 1/2 teaspoons oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 12 ounces elbow macaroni
  • 2 cups shredded vegan cheese (optional, for topping)

Instructions

  1. In a large stockpot, heat olive oil over medium heat. Add onion, garlic and ground beef. Saut̩ until beef has browned Рabout 5 minutes.
  2. Add diced tomatoes, chili beans, chicken broth and seasonings. Increase heat to medium-high and bring to a boil.
  3. Reduce heat to a simmer and add elbow macaroni. Cover the pot and simmer until liquid has been absorbed and macaroni is tender – about 10 minutes (depending on brand).
