Ingredients

  • 2 7-ounce cans chunk light tuna in water, drained
  • 1/2 cup halved kalamata olives
  • 2 tablespoons capers
  • 2 tablespoons finely diced red onion
  • 1/4 cup chopped parsley
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1 tablespoons water
  • 2 teaspoons Dijon mustard
  • Salt & pepper, to taste

Instructions

  1. In a bowl, mix all ingredients together until combine, breaking up tuna into small pieces as needed.
  2. If needed, add 1 – 2 tablespoons water to thin out “dressing”.
