New Year’s Black Eyed Pea Salad

Ingredients

  • 4 15-ounce cans black eyed peas, rinsed and drained
  • 1 bell pepper, diced
  • 1 English cucumber, seeded and chopped
  • 1 pound cherry and/or grape tomatoes, chopped
  • 2 green onion, thinly sliced
  • 1 teaspoon minced garlic (1 large clove)
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup white wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1 1/4 teaspoons coarse salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine all ingredients and stir to evenly coat with olive and vinegar.
  2. Adjust salt and pepper to taste, and let salad rest for at least 30 minutes to allow flavor to develop.
