Summer Fruit Salad
Refreshing, fruity and light, this simple summer fruit salad is a tried and true! It combines fresh fruit with the aromatic, cool flavor of mint and a just hint of tartness from the lime juice. And, it turns out it is pretty healthy too!
Why I love this summer fruit salad
This recipe is actually a tried-and-true recipe. It was my absolute favorite when I was pregnant and couldn’t get enough fruit. Seriously, isn’t every pregnant chick in the world is crazy for fruit? Yes. They are. I had lost the recipe for a while but luckily, a few weeks ago, I was cleaning out my “office” and I found a notebook with random notes and recipes in it – and this was one of them. Of course, I was so, so excited so I thought I’d share it with you!
If you like this fruit salad recipe, you have to try this winter fruit salad, and this pear arugula salad and this maple bourbon grilled peach salad.
Searching for more fruity recipes? This prosciutto bruschetta features fresh summer peaches, and you will probably love this grilled pineapple recipe or these sweet and savory, pineapple pork chops. And one more salad recommendation, is this sweet, strawberry poppyseed salad.
Ingredients & substitutions
- Fresh mint leaves – Adding mint leaves adds an aromatic and fresh flavor element to this salad, elevating the whole salad.
- Lime juice – Even though it seems like a simple ingredients, this helps prevent the fruits from browning, as well as contributing to the flavor and creating the syrup as it macerates with the sugars and fruit juices.
Making changes to a recipe can result in recipe failure. Any substitutions listed below are simple changes that I believe will work in this recipe, but results are not guaranteed.
