Mexican Street Corn & Cucumber Salad

Ingredients

  • 2 16-ounce packages frozen corn, thawed
  • 1 cup diced red onion
  • 2 chopped cucumbers
  • 1/3 cup chopped fresh cilantro
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 2 tablespoons diced green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 34 ounces grated aged Cojita or parmesan cheese, divided

Instructions

  1. In a large bowl, stir together all the ingredients (except the cheese).
  2. Add half the cheese and stir to combine. Allow salad to sit for about 30 minute too let flavors develop.
  3. Garnish with remaining cheese before serving.
