Mexican Chocolate Cupcakes with Chocolate Cinnamon Buttercream Frosting

This past weekend, my best friend Chelsea had a housewarming party. She and her husband just moved into a really cute house in the Milwaukee suburbs, and Marc and I went down to celebrate. I decided at the last minute to see if there was anything I could do to help out, and, of course, Chelsea said no. But, I wanted to do something to contribute, so I made these Mexican Chocolate Cupcakes to go along with the taco-margarita theme that was already planned.

The recipe was inspired by one a recipe for Day of the Dead cupcakes from one of the very first cookbooks I ever bought for myself, Cupcakes Galore. But, I didn’t use the one in the book for several reasons. It wasn’t dairy-free. It wasn’t that simple. And, I wanted to be able to make a lot of them to fill up the basket tray that I had gotten.

So I doctored up a cake mix, and made a dairy-free frosting using Crisco’s butter flavored shortening (I know, it’s not that healthy, but it’s the quickest substitute for butter that I know of right now). And, they turned out great. I added a little cinnamon and cayenne pepper to both the cake and the frosting, and it was just enough to create the flavors I was going for.

The look of the cupcakes themselves turned out a little like the poop emoji (I know, I’m sorry, but seriously picture these cupcakes with little eyes…). So I had to add a little something to jazz them up some giant sprinkles, which ended up being the perfect match for the wrappers. Something things just work out, don’t they? On top of that, I had just enough wrappers to fill that basket tray I was telling you about. It turned out so, so cute, and the cupcakes were delicious.

Mexican Chocolate Cupcakes with Chocolate Cinnamon Buttercream Frosting

  • Yield: 24 cupcakes

Ingredients

For the cupcakes:

  • 1 16.5-ounce box Devil’s Food cake mix (dairy-free)
  • 1/2 cup vegetable oil
  • 1 cup water
  • 3 eggs
  • 1 teaspoon cinnamon
  • 1/8 teaspoon cayenne pepper

For the frosting:

  • 1 cup butter-flavored vegetable shortening
  • 3/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch cayenne pepper
  • 6 tablespoons water
  • 4 cups powdered sugar

Instructions

For the cupcakes:

  1. Preheat oven according to package directions for cupcakes, and line a cupcake pan with paper liners.
  2. In a large bowl, with an electric mixer *affiliate link, mix together cake mix ingredients, cinnamon and cayenne pepper.
  3. Bake cupcakes as directed on box, allowing them to cool before frosting.

For the frosting:

  1. In a large bowl, beat together the shortening, vanilla, cocoa powder, spices and water. Add 1 cup of powdered sugar at a time, until combined.
  2. Frost cupcakes as desired.
