Kale Mango Salad

Ingredients

  • 1 large bunch kale, stems removed, leaves roughly chopped
  • 1/2 teaspoon coarse salt, divided
  • 4 tablespoons lemon juice, divided
  • 3 tablespoons olive oil, divided
  • 1 tablespoon honey
  • 1/4 teaspoon pepper
  • 12 mangos (depending on size), chopped
  • 1/4 cup roasted & salted pepitas
  • 23 tablespoons chopped fresh cilantro

Instructions

  1. In a large bowl, combine kale, 1 tablespoon olive oil, 1 tablespoon lemon juice and 1/4 teaspoon salt. Massage the kale until it begins to wilt and a darker color develops.
  2. In a small bowl, whisk together the remaining lemon juice, salt, olive oil, honey and pepper. Dress the salad and top with mango, pepitas and cilantro.
