Coleslaw is just one of those things that you always make the same way. You know how you like it, and most of the time if you try one that isn’t made “your way” it’s probably not one you’re going to love. Or maybe that’s just me. I’ve always been pretty picky about mine, and I almost always hate coleslaw at restaurants.

But, I’m a food blogger. So I have to step out of my comfort zone every once in a while, right? Well I did just that when I made this horseradish slaw.

We had it with salmon a while ago, and I can remember that it still felt like summer. Other than that, the only thing I remember is how great this slaw was. It had just the right kick to it, paired with the zip of vinegar to make it extra refreshing – making it the perfect side dish for a heavy meal, even Thanksgiving.

Horseradish Slaw

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup finely diced onion
  • 1 – 2 tablespoons lemon juice
  • 2 teaspoons red wine vinegar
  • 1 tablespoon prepared horseradish
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups shredded cabbage
  • 2 cups shredded carrots

Instructions

  1. In a large bowl, whisk together the mayonnaise, onion, lemon juice, vinegar, horseradish, salt and pepper.
  2. Add cabbage and carrots, stirring to combine.
  3. Allow coleslaw to chill in the refrigerator for 30 minutes before serving.

    Totally hear ya on the restaurant coleslaw. I never like it! I pretty much only like my mom’s and I think I wouldn’t even be able to make it her way.
    Reminds me that I will have to ask her to make it with me next time I visit.
