What I love about grilled herb mustard chicken
This recipe is an easy recipe and so was the Easy Chicken Pot Pie that I posted last week. Both were recipes I made a lot when we were living in Wichita, and making them again is bringing back some great memories of our first years of moving around for hockey.
This recipe in particular – grilled herb mustard chicken is as simple as it gets. You make a quick mustard based sauce with dried herbs and you brush it on the chicken every so often as its grilling.
That’s it. It’s packed with flavor and makes a really great burger alternative for grilling. Perfect for your upcoming Labor Day festivities or just any old weeknight meal.

Ingredients & substitutions
- Chicken – I like to use boneless, skinless chicken breasts for this recipe. The lean meat of chicken breasts absorbs the flavors of the marinade well. Plus, their relatively uniform thickness works wonders when cooking on the grill. Plus, if they are not even you can easily pound them to an even thickness.
Making changes to a recipe can result in recipe failure. Any substitutions listed below are simple changes that I believe will work in this recipe, but results are not guaranteed.

How to make grilled herb mustard chicken
Mix the sauce. Whisk together the mustard, seasonings and water until it has a nice smooth consistency. Coat the chicken with the sauce and save the remaining sauce.
Grill the chicken. This should take about 10-12 minutes, flipping the chicken halfway through. The chicken should be 165˚F when done. Brush more sauce on the chicken a few minutes before the chicken is done grilling.
