Ingredients & substitutions

  • Chicken – I like to use boneless, skinless chicken breasts for this recipe. The lean meat of chicken breasts absorbs the flavors of the marinade well. Plus, their relatively uniform thickness works wonders when cooking on the grill. Plus, if they are not even you can easily pound them to an even thickness.

How to make grilled herb mustard chicken

Mix the sauce. Whisk together the mustard, seasonings and water until it has a nice smooth consistency. Coat the chicken with the sauce and save the remaining sauce.

Grill the chicken. This should take about 10-12 minutes, flipping the chicken halfway through. The chicken should be 165˚F when done. Brush more sauce on the chicken a few minutes before the chicken is done grilling.

Ingredients

  • 1/4 cup Dijon mustard
  • 2 tablespoons dried parsley
  • 1 tablespoon dried oregano
  • 1/2 tablespoon dried basil
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons water
  • 4 boneless skinless chicken breast

Instructions

  • In a small bowl, stir together mustard, spices and water until smooth.
  • Coat chicken with a thick layer of the sauce, reserving the rest for later.
  • Grill chicken for 10 – 12 minutes over medium heat, turning once.
  • During the last few minutes of grilling, brush chicken with a sauce until coated.
