Ingredients

  • 1 cup jasmine rice
  • 1 cup full-fat, canned coconut milk
  • 1 1/2 cup water
  • 1/2 teaspoon coarse salt

Instructions

  1. Combine the ingredients in a large saucepan. Cover and bring to a boil.
  2. Reduce heat to medium-low, and simmer for about 20 minutes – until rice is fluffy and liquid has been absorbed.
  3. Remove from heat and allow rice to sit for an additional 5 minutes. Fluff with a fork before serving.
