This curry chicken salad makes a unique and tangy chicken salad with a hint of cilantro. It’s creamy, yet light and loaded with crispy bell peppers, golden raisins, and crunchy cashews. Served on pita bread or toast, this flavorful chicken salad makes a great lunch or a side dish.  

Ingredients

  • 3 boneless skinless chicken breast, cooked and chopped
  • 2 stalks celery, diced
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced onion
  • 1/2 cup roughly chopped cashews
  • 1/3 cup golden raisins
  • 1/4 cup chopped fresh cilantro
  • 3/4 cup mayonnaise
  • 2 teaspoons curry powder
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Place all ingredients in a large bowl and stir to combine.
