I have been invited to be with my niece and her children ( all grown up) with exception of Benjamin 16 – who can only eat anything non-dairy and loves his chocolate chip version his mom gets at a nutritional vegan bakery. I noticed there is so much sugar – white & Brown – and the other ingredients very high in price…I am 74 and on a very limited budget like so many in the rest of this world – is there any way to cut corners and still have him enjoy his treats?

It’s so nice of you to want to bake something he can enjoy too. Cutting the sugar in a recipe will change the way to cookies turn out. Sugar affects the way the cookies spread and their texture, so I wouldn’t cut it. I would suggest stocking up on ingredients when they’re on sale and making simple swaps that don’t cost a lot of money. I like to use Crisco instead of butter for baking because it can be pretty inexpensive, and Walmart has a dairy free chocolate chip like that isn’t too much more than their regular version.
