
Chocolate Chip Waffles and Ice Cream
Make your breakfast a little sweeter with these easy chocolate chip waffles. This recipe makes the best homemade waffles. They’re crispy on the outside with light and fluffy center flecked with mini semi-sweet chocolate chips. Top with your favorite dairy free ice cream (we used Hudsonville!) for an extra indulgent treat.

Every once in while, I let the kids have ice cream for breakfast and do anything they want. I call it a “yes day” and I let them decide everything we’re going to do for the day. No restrictions, as long as they will be safe doing they’re chosen activities, I say “yes” to any request.
Ice cream for breakfast is one of their favorites, and I can’ t think of a better way to do it than crispy, warm, chocolate chip waffles topped ice cream.
So I’ve taken our favorite homemade waffles recipe and added mini dairy free chocolate chips to the batter. They’re perfectly crispy on the outside and light and fluffy in the center.

This recipe uses eggs, so the waffles aren’t vegan, but if you want to swap out the eggs, I recommend using a mashed banana or a flax egg.

How to make chocolate chip waffles
Sift the dry ingredients. In a big mixing bowl, whisk the flour, baking powder, salt and sugar together until smooth.
Mix in the wet ingredients. Stir in the dairy free milk, oil, eggs and vanilla and whisk until smooth. Stir in the chocolate chips.
Make the waffles. Scoop the batter into your hot waffle iron. I recommend following the instructions that come with your waffle iron for best results.
Top with ice cream. Remove the waffles from the oven and top with ice cream and a drizzle of chocolate syrup and extra chocolate chips – or chocolate sprinkles – before serving.

This will depend on the type of waffle iron you’re using, but generally it takes 3 – 5 minutes for the waffles to finish baking in your waffle iron.
