Waffles and ice cream for breakfast.

Every once in while, I let the kids have ice cream for breakfast and do anything they want. I call it a “yes day” and I let them decide everything we’re going to do for the day. No restrictions, as long as they will be safe doing they’re chosen activities, I say “yes” to any request.

Ice cream for breakfast is one of their favorites, and I can’ t think of a better way to do it than crispy, warm, chocolate chip waffles topped with Hudsonville Ice Cream’s Dairy Free S’mores and Peanut Butter Truffle flavors.

So I’ve taken our favorite homemade waffles recipe and added mini dairy free chocolate chips to the batter. They’re perfectly crispy on the outside and light and fluffy in the center.

Equipment

This recipe uses eggs, so the waffles aren’t vegan, but if you want to swap out the eggs, I recommend using a mashed banana or a flax egg.

How to make chocolate chip waffles

Sift the dry ingredients. In a big mixing bowl, whisk the flour, baking powder, salt and sugar together until smooth.

Mix in the wet ingredients. Stir in the dairy free milk, oil, eggs and vanilla and whisk until smooth. Stir in the chocolate chips.

Make the waffles. Scoop the batter into your hot waffle iron. I recommend following the instructions that come with your waffle iron for best results.

Top with ice cream. Remove the waffles from the oven and top with Hudsonville’s Dairy Free Ice Cream and a drizzle of chocolate syrup and extra chocolate chips – or chocolate sprinkles – before serving.

How long do waffles take to cook?

This will depend on the type of waffle iron you’re using, but generally it takes 3 – 5 minutes for the waffles to finish baking in your waffle iron.

Again, this will depend on the size of your waffle iron, but each waffle in this recipe comes out at 338 calories.

What can I put on my waffles instead of syrup?

There are so many things you can put on waffles instead of syrup. Ice cream, powdered sugar, chocolate syrup, whipped cream and strawberry sauce are just a few ideas.

How do you eat waffles with ice cream?

They’re crispy on the outside with light and fluffy center flecked with mini semi-sweet chocolate chips.   • 1 3/4 cup all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1/4 teaspoon coarse salt
  • 1 1/2 cups almond milk
  • 6 tablespoons canola oil

Instructions

  1. Preheat waffle oven.
  2. In a large bowl, whisk together the flour, baking powder, sugar and coarse salt.
  3. Add milk, canola oil, eggs and vanilla extract – one ingredient at a time – whisking until smooth.
  4. Stir in chocolate chips.
  5. Prepare waffles according to waffle maker directions*.
