Canadian Bacon & Sausage Breakfast Pizza

  1. Preheat oven to 450˚F.
  2. In a large skillet over medium-high heat, cook the sausage, breaking up the meat as it browns. Cook until golden brown. Remove from heat and drain any excess fat.
  3. On a parchment lined cookie sheet, stretch the pizza dough to about 1/4-inch thick.
  4. In the following order, top the pizza: pizza sauce, Canadian bacon, mozzarella cheese, cooked sausage, arugula leaves.
  5. Crack each egg onto the pizza, keeping the yolk intact and allowing the whites to spread slightly.
  6. Bake the pizzas for 10 – 15 minutes or until crusts are browned and the egg whites have set. Remove pizza sooner for runny yolks.
  7. Allow pizza to cool for 2 -3 minutes and garnish with remaining arugula before slicing.
