Birthday Cake Pancakes

Celebrate your birthday all day long with these awesome funfetti pancakes. These birthday cake pancakes are sweet, fluffy and topped with a powdered sugar glaze and dairy free birthday cake ice cream.



For the pancakes:

  • 1 1/2 cup all-purpose flour

  • 2 tablespoon sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1 1/4 cup unsweetened almond milk

  • 3 tablespoons canola oil

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon almond extract

  • 1/2 cup sprinkles

For the glaze

  • 1 cup powdered sugar
  • 2 tablespoons almond milk

For serving:


For the pancakes:

  1. Whisk the flour, baking powder, sugar and salt together in a large mixing bowl.
  2. Mix the milk, canola oil, egg, vanilla extract and almond extract together in a separate bowl. Whisk until smooth.
  3. Add the liquid ingredients to the dry ingredients and gently stir to combine, and fold in sprinkles.
  4. Preheat a non-stick griddle or large skillet to medium heat. (Coat pan with butter or oil if not using non-stick).
  5. Pour about ⅓ cup batter onto the griddle for each pancake. Allow it to cook until bubbles are visible throughout the pancake before flipping.
  6. Repeat until all batter has been used.

To make the glaze:

  1. Whisk the powdered sugar and almond milk together until smooth.

To serve:

  1. Stack a few pancakes and drizzle with glaze.
  2. Top each stack with dairy free whipped cream, a scoop of Hudsonville’s Dairy Free Birthday Cake and some sprinkles.
