BBQ Pulled Pork Loaded Baked Potatoes

These BBQ pulled pork loaded baked potatoes are a perfect way to use up leftover meat from pulled pork sandwiches and they’re topped with all the fixings for a complete meal.

This recipe is not dairy free. It was published before Simply Whisked went dairy free, but I have chosen not to remove it as a reference for incoming traffic. Feel free to swap dairy free substitutes for the ingredients to make it dairy free.

Don’t know what to do with all of that leftover pulled pork you have?  Make some BBQ pulled pork loaded baked potatoes, of course!  Bake some medium sized potatoes in a 350°F (180°C) oven for about one hour.  If you brush the skins with some olive oil before baking them, you will get a nice and crispy crust.

Then heat up your pulled pork and a little extra barbecue sauce.

Slice the potatoes down the center and push the sides in to make them pop open.  Add a little butter and sour cream (or a lot if you want).

Next, add the green onions and shredded cheddar cheese.  Top the potatoes off with a big helping of the pulled pork. And, don’t forget to serve the potatoes with extra toppings!

Ingredients

  • 3 cups pulled pork
  • Barbecue sauce
  • 4 medium potatoes, baked
  • Butter or margarine
  • Sour cream
  • Shredded cheddar cheese
  • Sliced green onions

Instructions

  1. Add desired amount of barbecue sauce to pulled pork and heat.
  2. Slice each baked potato lengthwise and push the sides of the potatoes inward to open.
  3. Fill each potato with butter, sour cream, cheddar cheese and green onions. Top with pulled pork.
