I have another easy appetizer idea for you today, friends! Yes, this is another recipe from Ellie’s first birthday, but this one doesn’t require any cooking and barely requires any chopping. I give you: antipasto skewers. Cute little sticks of your favorite olives, cheeses, and deli meats, etc.
You can literally use anything you want, but I went with green and black olives, pepperoncini, roasted red peppers, salami, pepperoni and little balls of fresh mozzarella. Provolone or asiago would be really good too. My favorite part by far was the pepperoncinis, especially when they were next to a piece of mozzarella. So good.
Anyway, I made a batch of these for the party – about 1 1/2 skewers per person – and then I made a small batch of meat-and-cheese ones for people, like my sister, who won’t eat grown up things like olives. They definitely got eaten – gro I think I only ended up having a few leftover, and they didn’t last long either.
No recipe needed for this one. I just wanted to share the idea with you!
