Remember those strawberry mascarpone crostini I made for my friend’s bachelorette party? These 5 ingredient hummus bites were the on the second tier of that serving tray. Since the party was a larger group, I wanted to make finger foods that would be pretty to look at and easy to grab. So after I made the strawberry crostini, this is what I put together.

They might be the easiest appetizer you ever make. Seriously. There really isn’t much easier that this. Ok, maybe a dip because all you do is dump and stir, but this comes pretty close – especially for little bites. The only prep work involved is a little chopping. Just fill some phyllo shells with toppings and you’re done. Hooray for simplicity.

Those phyllo shells are pretty amazing. You can buy them in the freezer section, and all you have to do is fill them. You don’t even have to thaw. They can be baked or just filled, so there’s endless possibilities. I filled them with spinach artichoke dip for Ellie’s birthday party. Next, I’m thinking of doing  something sweet with them. Maybe lemon meringue or mini pecan pies. We’ll see.

These hummus bites turned out to be a hit, and I’ll definitely be making them again in the future. Especially since they’re so easy. You could even add a little red onion or kalamata olives, but I am really glad I kept things simple for a larger party.

Ingredients

  • 30 Phyllo shells
  • 1 small container hummus
  • 1 English cucumber, diced
  • 1 red bell pepper, diced
  • 1 small container crumbled feta

Instructions

  1. Fill each shell with a dollop of hummus.
  2. Top with cucumbers, bell pepper and feta.
