These 3 ingredient kiwi mojito popsicles are simple and refreshing. Plus they’re the easiest treat you’ll make all summer.
Summer might not be officially upon us yet, but the heat certainly is. But so are fresh herbs and summer fruits, so I really shouldn’t complain. But, I probably will because I absolutely detest the heat. Luckily, cold treats are an easy way to keep cool in the summer months, and this year, I’ve been a little bit obsessed with popsicles.
I bought this popsicle mold* (thanks to Meghan’s suggestion), and I’m super happy with it. I love how heavy duty it is, and I am so happy that I can use real wooden sticks. They’re so much cuter than those blue plastic sticks, and I don’t have to worry about them breaking.
So back to these kiwi mojito popsicles. I recently bought limeade because my usual brand of lemonade was out at the store, and it was such a refreshing change that my mind started going crazy with ideas for how I could incorporate it into a recipe. And what better way to use limeade than to make a mojito. I was also debating some limeade margaritas, but the kiwis sitting the fridge were calling my name. The popsicles just came naturally after that because the heat was making me crazy.
When you’re ready to remove your popsicles from the mold, run them under warm water for a second or two to loosen them up. Then you can either eat them right away or wrap and refreeze them.
- 7 – 8 kiwis, halved and peeled
- 1 small bunch mint leaves (about 1/2 cup)
- 1 3/4 cup limeade
- In a food processor, blend kiwis and mint leaves until smooth.
- Transfer mixture to a bowl and stir in limeade.
- Fill popsicle mold with liquid, add popsicle sticks and freeze.
